Perfect Envy™ Apples & Carmelized Onion Appetizer

I tell you, I have found a new fabulous apple for my family recipes! It's been working for all sorts of recipes and situations, and I'm so excited to share it with y'all!

In my household, my kids are quite picky about their foods. Especially when it comes to the look of those foods. So, when I found out about the awesome features of Envy™ Apples, I was especially intrigued!

Vanilla ice cream topped with Apple Crips made with Envy Apples These apples are crisp and not too sweet. Their higher citric acid content keeps them from "browning" quickly (literally, I had them sitting diced up for a while and they never browned). These apples are delicious in savory or sweet dishes. I've made them into Apple Crisp & this delicious Apple & Carmelized Onion appetizer!

They are a non-GMO crossover between Royal Gala & Braeburn apples.. and they're just plain good! They can be found at Publix, Whole Foods, and Walmart, and many other local stores, which you can find here.

I had the awesome opportunity to give out samples of my own recipe through the Publix Apron Cooking School AND I got to go to one of the cooking school events, where we had Envy™ Apples with each sample of food. It was such a treat, and I absolutely suggest going to one if you have the opportunity.

Anyway -- I want to share with you now one of the recipes that I submitted and got to enjoy at the Publix Apron Cooking School event in Jacksonville, FL as an appetizer. I hope you enjoy this recipe,  featuring Envy™ Apples, and come back to tell me how good it was!!

An Envy Apple & Carmelized Onion pastry appetizer


Servings 16 squares | Prep Time 10 mins | Saute Time 25 mins | Bake time 15 mins

Several pans with uncooked, prepared Apple and Carmelized Onion appetizersINGREDIENTS

2 Envy Apples - Peeled, cored, and diced
1lb Yellow Onions - Thinly sliced
3 tbsp of Unsalted Butter
½ tsp of salt
¼ tsp Ground Black Pepper
1 Sheet of Frozen Puff Pastry -Thawed just before use
4oz of Shaved Asiago Cheese
1 tbsp of minced Thyme


1. Melt butter in large frying pan over medium-high heat. Add onions and salt. Cook while stirring
occasionally, until softened
2. Add diced apples and stir in to coat. Reduce heat to medium and cook until onions are browned,
about 25 mins. Season with pepper to taste. Once done, set aside to cool.
3. Preheat oven to 375° and unwrap puff pastry sheet. Cut sheet into 16 squares and place on
parchment paper lined cookie sheet. Assure squares are not touching.
4. Place spoonful of mixture onto each square and top with a pinch of asiago cheese and minced
thyme. Bake 15 mins or until puffed and golden. Serve hot and enjoy!
